Different shapes, sizes and colors aptly describe 'Knife River' winter squash. This collection originated with three different indian tribes that lived along the Knife River in Missouri. Each tribe brought their own distinct squash that makes up this variety. The coloring is generally from salmon/pink to buff with an occasional green colored fruit. Whether the fruit is elongated or shaped like a hubbard squash, their unique sweet tasting fruit can be baked, roasted or fried. Maturity in 85-110 days. Edited by S. Derr
