Having withstood the test of time, this beet is an amazing vegetable. Perhaps the oldest variety still in existence, it boasts flavorful carrot shaped roots and edible purple greens. The roots are wrapped in coarse looking black flesh that resembles bark on trees. When wintered over, this exterior protects the taste of its dark roots during the cold months. As a biennial, it is recommended to dig up after the second year and winter over in sand or sawdust if winters are extremely harsh. A favorite of high end chefs and restaurants, this rare find is ideal in a wide variety of culinary dishes. Maturity is 60 days. Edited by S. Derr
