harvesting bok choy

When your bok choy has matured it is time to cut it down and use it is a stir fry!




If you would rather have delicate baby bok choy you can harvest it when it is as small 2" tall!


How long does it take?

  • 40-50 days to maturity (from seed)
  • Bok Choy is a cool weather crop so it will be ready by springtime
  • in the fall harvest just after the first frost.

How to I cut it?

  • The outer leaves can be cut off individually with a sharp knife, leaving smaller leaves to grow.
  • you can cut the entire plant off at the base with a sharp knife.

Eat it!

  • Bok Choy is best added to a stir fry or sauteed with garlic, sesame oil and a little chicken broth.
