This sumptuous treat is heavenly on scones or can be used as a glaze for fruit pies.

ROSE JELLY

Rose, Miniature, "Angel Wings"

Prep Time: 5 mins

Done in: 1 hour

1 1/2 quarts - deeply colored rose petals

2 cups - apple juice

3 1/2 cups - sugar

2 tbs. lemon juice

1/2 bottle - liquid pectin (Certo)

STEP 1:

  • Simmer together 1 1/2 quarts of deeply colored prepared rose petals and 2 cups of apple juice for 20 minutes.
  • Let the mixture stand for 1/2 hour.

STEP 2:

  • Strain out the petals
  • Add 3 1/2 cups of sugar, fresh lemon juice and liquid pectin.
  • Bring to a rolling boil for one full minute.

STEP 3:

  • Remove from heat
  • Skim off foam
  • Pour into jelly glasses
  • Store jelly in the refrigerator.
