Creamy Dill Sauce

by Maggie Tate (gardengirl)

Wondering how to use those spices from your kitchen garden? Here is a recipe for the bounty of dill from the CSA I belong to, which prompted me to find a way to use it.

My CSA has given me dill for two or three weeks and I needed to use some of it! I went on a recipe hunt for a dill sauce to eat with salmon cakes.  I found what I was looking for from Eating Well Magazine (Winter 2004)

1/4 cup reduced fat mayo (I use full fat canola mayo)

1/4 cup non fat plain yogurt (I used Fage Greek Yogurt)

2 scallions sliced (from the CSA!)

1 T lemon juice

1 T finely chopped dill (or parsley)

Freshly ground pepper to taste.

Combine all ingredients in a small bowl and mix well. Cover and refridgerate for up to 2 days.

It was delicious!

I love dill sauce! What did you put it on...? chicken, fish? Guess it could also be a salad dressing. Thanks for the recipe!

We ate it with salmon cakes (with chickpeas) that we (or at least the adults in the family) like and I usually use tzatziki sauce with it, but didn't have any at the moment, so I decided to look for something else that I could make. But it would be good with any fish in general. I will have to try it for chicken too! It was really good.
